Texas Beef Brisket

Yield: Makes 4 servings
Ingredients:
1
tablespoon paprika

teaspoons salt

1
teaspoon black pepper

1/4
teaspoon ground red pepper

1
small beef brisket, trimmed (about 1-1/4 pounds)

Texas BBQ Sauce (recipe follows)



Preparation:
1.
Combine paprika, salt, black and red pepper in small bowl; mix well. Rub spice mixture onto brisket. Cover; marinate in refrigerator overnight.

2.
Prepare Texas BBQ Sauce; set aside. Prepare grill for direct cooking.

3.
Place brisket on grid. Grill, covered, over medium heat 2-1/2 hours or until brisket offers a slight resistance when pierced; check occasionally and baste with sauce as needed. Boil any remaining sauce and serve on the side for dipping.

Yield: Makes about 3 cups
Ingredients:
1-1/2
cups ketchup

3/4
cup honey

1/2
cup cider or white vinegar

small onion, finely chopped

tablespoons Worcestershire sauce

jalapeño pepper,* seeded and minced

1
tablespoon mustard

1
teaspoon olive oil



Preparation:
1.
Combine all ingredients in medium bowl; mix well.
