Thai Chicken Salad

Makes 4 servings

Ingredients

1/2 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon sugar
3 tablespoons fresh lime juice
1-1/4 pounds cooked skinless, boneless chicken breast, diced
1/2 cup chopped green onion
1/2 cup peanuts, chopped
1/4 cup finely chopped fresh cilantro
1/4 cup finely chopped fresh mint
1/3 cup mayonnaise

Preparation

  1. Mix salt, chili powder, sugar and juice in a large bowl. Add chicken, onion, peanuts, cilantro and mint; stir until combined. Fold in mayonnaise.

Note

Used 3 bagels (.75X4).
