Thai-Style Coconut Chicken Soup

Diced tomatoes and shredded chicken in a creamy coconut soup
INGREDIENTS
| 1 | Cup shredded cooked chicken (1 cup = 4 oz) |
| 1 | can (13.5 oz ea) coconut milk |
| 6 | thin slices peeled fresh ginger |
| 1 | can (14.5 oz ea) Hunt's® Diced Tomatoes, undrained |
| 1 | *serving Thinly sliced green onions, optional |
| 1 | Tablespoon chili garlic sauce |
| 2 | Tablespoon fish sauce |
| 1/2 | Cup water |
PREPARATION:
- Combine all ingredients in medium saucepan. Cook over medium-low heat 10 minutes, or until hot and flavors have blended, stirring occasionally.
- Divide soup between 4 bowls. Garnish with sliced green onions, if desired.
