Toasted Coconut and Tropical Fruit Parfait

INGREDIENTS
| 2 | tablespoons flaked sweetened coconut |
| 1 | cup pineapple sherbet |
| 1 | cup diced strawberries |
| 3/4 | cup diced mango or peaches |
| 1 | kiwi, peeled and diced |
PREPARATION:
- Heat small skillet over medium-high heat until hot. Add coconut; cook and stir 1 to 1-1/2 minutes or until golden, stirring constantly. Remove from heat; set aside.
- Spoon 1/4 cup sherbet into each of 4 parfait or wine goblets. Top with mango, strawberries and kiwi. Sprinkle coconut over top.
