Sage, a native Mediterranean herb, has been enjoyed for centuries for both its culinary and medicinal uses. The name is Latin (meaning "safe") and is a reference to the healing powers once attributed to the herb.

INGREDIENTS

2 cans (10 ounces each) no-salt-added whole tomatoes, undrained
1 teaspoon olive oil
3 cloves garlic, minced
1/4 cup chopped fresh parsley
2 tablespoons chopped fresh sage
2 teaspoons sugar
1/4 teaspoon black pepper

PREPARATION:

  1. Place tomatoes in food processor or blender; process until finely chopped. Set aside.
  2. Heat oil in medium saucepan over low heat. Add tomatoes, garlic, parsley, sage, sugar and black pepper. Cook over medium heat 30 minutes or until thickened.
