Tomato Salsa

This recipe is part of the recipe for Fried Catfish


Makes about 2 cups


1-2 cups finely chopped fresh tomatoes
1/2 green bell pepper, seeded and chopped
1 tablespoon chopped fresh cilantro
1 jalapeño pepper,* seeded and minced
1 clove garlic, minced
1/4 teaspoon ground cumin
1/4 teaspoon sugar (optional)

*Jalapeño peppers can sting and irritate the skin, so wear rubber gloves when handling peppers and do not touch your eyes.


  1. Combine tomatoes, bell pepper, cilantro, jalapeño pepper, garlic and cumin in medium bowl. Cover with plastic wrap; leave at room temperature 1 hour. Pour off any watery juices that have collected. Add sugar, if desired.
