Yield: Makes about 2 cups
Ingredients:

tablespoons olive oil or butter
1
clove garlic, minced
2
pounds ripe plum tomatoes, peeled, seeded and chopped
1
teaspoon sugar
1/4
cup finely chopped prosciutto or cooked ham (optional)
1
tablespoon finely chopped fresh basil
Salt and black pepper
Preparation:

Heat oil in medium saucepan over medium heat until hot. Add garlic; cook 30 seconds or until fragrant. Stir in tomatoes and sugar. Cook 10 minutes or until most of liquid has evaporated. Stir in prosciutto, if desired, and basil. Cook 2 minutes. Season to taste with salt and pepper.
