Tomato Sauce
YIELD Makes about 2 cups

INGREDIENTS
| 2 | tablespoons olive oil or butter |
| 1 | clove garlic, minced |
| 2 | pounds ripe plum tomatoes, peeled, seeded and chopped |
| 1 | teaspoon sugar |
| 1/4 | cup finely chopped prosciutto or cooked ham (optional) |
| 1 | tablespoon finely chopped fresh basil |
| Salt and black pepper | |
PREPARATION:
- Heat oil in medium saucepan over medium heat until hot. Add garlic; cook 30 seconds or until fragrant. Stir in tomatoes and sugar. Cook 10 minutes or until most of liquid has evaporated. Stir in prosciutto, if desired, and basil. Cook 2 minutes. Season to taste with salt and pepper.
