Wire steamer racks that fit in the wok may also be used for steaming and are especially good for braising and smoking. A round wire cooling rack may be used.
- Place wire rack in wok. Add water to 1 inch below rack. (Water should not touch rack.)
- Cover wok; bring water to a boil over high heat.
- Arrange ingredients on heatproof plate. Place plate on rack in wok.
Place plate in wok.
- Cover wok and reduce heat to medium. Steam food as directed in recipe. Carefully remove plate from wok.
