INGREDIENTS

1 English muffin, split
1 teaspoon Dijon mustard
3 slices (about 3 ounces) lean deli smoked turkey
3 thin slices papaya
1 slice (1 ounce) Monterey Jack cheese

PREPARATION:

  1. Spread inside of muffin halves with mustard. On half, layer turkey, papaya and cheese. Press remaining muffin half, mustard-side down, over cheese.
  2. Spray small skillet with butter-flavored cooking spray. Lightly spread butter over surface of muffins, if desired. Cook sandwich over medium heat until lightly toasted, about 4 minutes; turn and cook on other side until lightly toasted and cheese is melted. Serve hot.
