INGREDIENTS
| 1 | English muffin, split |
| 1 | teaspoon Dijon mustard |
| 3 | slices (about 3 ounces) lean deli smoked turkey |
| 3 | thin slices papaya |
| 1 | slice (1 ounce) Monterey Jack cheese |
PREPARATION:
- Spread inside of muffin halves with mustard. On half, layer turkey, papaya and cheese. Press remaining muffin half, mustard-side down, over cheese.
- Spray small skillet with butter-flavored cooking spray. Lightly spread butter over surface of muffins, if desired. Cook sandwich over medium heat until lightly toasted, about 4 minutes; turn and cook on other side until lightly toasted and cheese is melted. Serve hot.
