Tropical Turkey Salad
Yield: Makes 6 servings
Ingredients:

cups cubed cooked turkey

cups diced ripe mango (2 medium mangos)

1
cup pecan pieces, toasted

3/4
cup reduced-fat mayonnaise

tablespoon lime juice

1
teaspoon poppy seeds

1/2
teaspoon salt

1/4
teaspoon black pepper

6
cups greens, such as Bibb lettuce or spinach leaves



 
Preparation:
1.
Combine turkey, mangos and pecans in large bowl. Combine remaining ingredients except greens in small bowl. Blend well and pour over turkey mixture; toss.

2.
Arrange greens on plates. Spoon turkey salad over greens. Serve immediately or cover and refrigerate up to 4 hours.
