Turkey and Sharp Cheddar Panini with Cranberry Mayo
Yield: Makes 2 to 4 servings
Ingredients:
1/3
cup mayonnaise
1/4
cup dried sweetened cranberries
2
tablespoons Dijon mustard
2
tablespoons milk
1/4
to 1/2 teaspoon ground cumin
1
loaf (10 inches) Italian bread
6
ounces smoked deli sliced turkey
2
ounces sharp Cheddar cheese, thinly sliced
1
tablespoon butter or margarine
Preparation:

Place mayonnaise, cranberries, mustard, milk and cumin in food processor or blender; process until almost smooth, scraping sides frequently. Place bread on cutting board; cut in half horizontally. Spread mayonnaise mixture evenly over cut sides of bread. Layer turkey and cheese on bottom of bread; close sandwich with top of bread.

Melt butter in large nonstick skillet over medium heat. Add sandwich; press down lightly with spatula or weigh down with small plate. Cook sandwich 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.
