Turn Your Maple Syrup Into Candy

There are a lot of things I miss about living in the woods now that I'm a New Yorker. One of the major things I miss about living in the woods is, of course, nature. I miss having endless trees in sight and I particularly miss the Maple trees. If you're lucky enough to have these sweet-spilling trees on your property, take advantage of them! My mom used to always take the sap from the trees straight from our back yard and make delicious maple candy from it. Not only is this a healthy candy when compared to the typical sugar-filled candies out there, but it's absolutely affordable and eco-friendly, too! It doesn't hurt the trees to use their sap and making this candy yourself, instead of buying candy from the store, will reduce the use of resources and the production of waste from candy factories.

INGREDIENTS

2 cups of real maple syrup
A candy thermometer
A saucepan

PREPARATION:

  1. Pour the maple syrup in the saucepan and bring it to a boil.
  2. Once the syrup is boiling, reduce the heat to a low flame.
  3. Continue to heat until your thermometer reads 233°F.
  4. Remove the syrup from the heat when it reaches 233°F.
  5. Allow the syrup to cool to 110°F.
  6. Beat the syrup with a wooden spoon for 5 minutes.
  7. Place the syrup in candy molds once it's stiff or form balls with your hands and lay out on a cookie sheet. Make sure to allow it to cool enough so as not to burn yourself, but it is still warm enough to manipulate (in other words—use your thermometer).
