Vegan Pumpkin Soup
Allergies have been a killer the past couple months in South Carolina. I guess that's what you get when you live in a place where short sleeves are worn into October. It was recommended to me that I give up dairy in order to soften the punch of my allergies because dairy is known for producing mucus in the body. So for the most part, I try and stay away from dairy during the week, though I'll cheat a bit on the weekends. And it actually seems to be working quite dramatically.
So this year's pumpkin soup recipe is vegan. The recipe is smooth and creamy whether you're a vegan or not. I subbed in almond for soy milk because that's what I had on hand and my only complaint is that almond milk doesn't have near the protein of soy milk, so consider topping it off with some roasted pumpkin seeds from your cooking pumpkin.
The orange coloring of the pumpkin tells us that it's loaded with the cancer-fighting antioxidant beta-carotene while pumpkin seeds are loaded with zinc, which is known for supporting prostate health.
INGREDIENTS
| 1 tbsp | olive oil |
| 1 | Yellow Bermuda onion, diced |
| 1 | small cooking pumpkin |
| 1 1/3 cups o | rganic vegetable broth |
| 3 cups | almond milk |
| 1/2 tsp | nutmeg |
| 1/2 tsp | sugar |
| 1 tsp | ginger |
| 1 tsp | sea salt |
| 1/2 tsp | freshly cracked pepper |
| Garnish with roasted pumpkin seeds. | |
PREPARATION:
Method
- Cut your pumpkin in half and then remove seeds with a spoon. Preheat the oven to 400 degrees and roast with the skin on for about 30 minutes, until a fork easily punctures the meat all the way through to the skin.
- Add pumpkin to a blender and blend continuously until smooth. You may need to add 1 to 3 tbsp of water to produce the puree.
- Sauté onion in olive oil until softened a bit.
- Add in pumpkin, broth, almond milk, nutmeg, sugar, ginger, salt, and pepper. Cook for 15 minutes. Use an immersion blender to combine or add to a blender. Blend until smooth and creamy. Push through a fine sieve to remove any lumps. Garnish with pumpkin seeds if you like.
