INGREDIENTS

1/4 cup mayonnaise
1/4 cup prepared pesto
4 cups assorted fresh vegetables, such as shredded carrots, onion strips, sliced radishes, cubed zucchini and bell peppers
4 pita breads
4 leaves leaf lettuce
4 slices provolone cheese
Chopped tomato

PREPARATION:

  1. In medium bowl, combine mayonnaise and pesto; mix well.
  2. Add vegetables; toss to coat.
  3. Wrap two pita breads in paper towels. Microwave on HIGH 20 to 30 seconds or just until warm. Repeat with remaining pita breads. Top half of each pita bread with 1 lettuce leaf, 1 slice cheese and 1/4 of vegetable mixture. Sprinkle with tomato. Fold other half of pita bread over vegetables.
