Adzuki Cakes

I first heard about adzuki beans nearly two years ago and since then, have really put them to good use. They're smaller than black beans and reddish brown in color but loaded with nutrients. In fact, these little guys contain some of the highest levels of protein and lowest levels of fat of any variety of beans. They also contain high levels of potassium, fiber, B vitamins, iron, zinc, and manganese. Adzuki beans promote regular bowel movements, are a good source of energy, and help lower cholesterol.

They may also have a role in preventing breast cancer. Some experts credit the presence of phytoestrogens in adzuki beans with helping to prevent breast cancer. If you're looking to go green by cutting back on your meat consumption, these are a great food to add to your grocery list because they pack a big nutritional punch.

Buy the organic variety either out of the can for ease or even better from the bulk bins at your local health foods store. If you buy them from the bulk bins, soak for about 3 hours. This is better than simmering them at low heat because it doesn't waste electricity. Adzuki beans are a sweeter variety of beans, great when made into cakes.

INGREDIENTS

Adzuki Cakes:
2 cups adzuki beans
¼ cup parmesan cheese
½ cup red onion, chopped finely
¼ tsp salt
¼ tsp freshly cracked pepper
dash cayenne
½ cup bread crumbs
Garlic Ginger Aioli:
½ cup organic mayonnaise
2 cloves garlic, chopped finely
1‑inch cube ginger, shredded
Top with a dollop of garlic ginger aioli (recipe to follow)

PREPARATION:

Adzuki Cakes:

  1. Combine all the ingredients and form into 3 to 4 ounce patties.
  2. Sauté with olive oil for about four minutes on each side or until browned.

  1. Combine ingredients.
