Veggie Pizza Pitas

INGREDIENTS
| 2 | rounds whole wheat pita bread, cut in half horizontally (to make 4 rounds) |
| 1/4 | cup pizza sauce |
| 1 | teaspoon dried basil |
| 1/8 | teaspoon red pepper flakes (optional) |
| 1/2 | cup thinly sliced green bell pepper |
| 1/2 | cup thinly sliced red onion |
| 1 | cup sliced mushrooms |
| 1 | cup (4 ounces) shredded mozzarella cheese |
| 2 | teaspoons grated Parmesan cheese |
PREPARATION:
- Preheat oven to 475°F.
- Arrange pita rounds, rough sides up, in single layer on large nonstick baking sheet. Spread 1 tablespoon pizza sauce evenly over each round to within 1/4 inch of edge. Sprinkle with basil and red pepper flakes, if desired. Top with bell pepper, onion, mushrooms and mozzarella.
- Bake 5 minutes or until cheese is melted and pita edges are golden brown. Remove from oven. Sprinkle 1/2 teaspoon Parmesan over each round.
Note
These pitas can be served as appetizers, as well.
