Veggie Pizza Pitas

Prep Time 10 minutes


Makes 4 servings


2 rounds whole wheat pita bread, cut in half horizontally (to make 4 rounds)
1/4 cup pizza sauce
1 teaspoon dried basil
1/8 teaspoon red pepper flakes (optional)
1/2 cup thinly sliced green bell pepper
1/2 cup thinly sliced red onion
1 cup sliced mushrooms
1 cup (4 ounces) shredded mozzarella cheese
2 teaspoons grated Parmesan cheese


  1. Preheat oven to 475°F.
  2. Arrange pita rounds, rough sides up, in single layer on large nonstick baking sheet. Spread 1 tablespoon pizza sauce evenly over each round to within 1/4 inch of edge. Sprinkle with basil and red pepper flakes, if desired. Top with bell pepper, onion, mushrooms and mozzarella.
  3. Bake 5 minutes or until cheese is melted and pita edges are golden brown. Remove from oven. Sprinkle 1/2 teaspoon Parmesan over each round.


These pitas can be served as appetizers, as well.
