Volcano of Doom
Yield: Makes 6 servings
Ingredients:

pounds sweet potatoes (about 4 medium), peeled and quartered
1/2
cup shredded mozzarella and American cheese
Preparation:

Place potatoes in saucepan; cover with water. Cook 20 to 25 minutes or until tender; drain. Add milk and salt to potatoes; mash with potato masher until light and fluffy.

Spray pie plate with nonstick cooking spray. Mound potatoes in pie plate, forming mountain shape about 4 inches tall and 5 inches across at base. Leave 1-inch space between plate and potato mixture. Make deep hole in top of mountain.

Preheat oven to 350°F. Whip cream until soft peaks form; stir in cheese. Spoon whipped cream mixture into hole in mountain, allowing excess to run down sides. Bake about 20 minutes or until bubbling.
Tip
Gravy from a jar could be added for effect, as a moat around bottom or dripped onto sides.
