When I first started writng about becoming a weekday vegetarian at the beginning of April, it was prompted by TreeHugger founder Graham Hill's decision to change his lifestyle and eat less meat. Graham gave a TED talk earlier this year outlining his thoughts on being a weekday vegetarian. Take a few minutes to watch Graham's talk. It makes a lot of sense. Here are 5 weekday vegetarian meal suggestions for the upcoming week:

We are coming to the end of the wild leek season and I am taking every opportunity possible to use them in my cooking. Rebecca Vandevelde has the same idea and this simmered pork with vegetables in wild leek pesto that she made for us took full advantage of this soon to disappear vegetable.
I was surprised to see that the vinegar she used in this recipe was white wine vinegar, I could have sworn there was balsamic vinegar in it. I'm assuming that the honey was the ingredient that gave it that depth of flavour. In any case, the pork was tender and really delicious and the roasted vegetables with the wild leek pesto was a perfect accompaniment. The vegetables would be a great side dish for any grilled meat as well. In fact, if you were going to a potluck a big bowl of these vegetables and pesto served at room temperature would be a welcome addition to the table.
