I'm a real sucker for casserole type dishes. They are usually pretty easy to make and easy to clean up afterward. I also really like dishes where there are a bunch of things mixed together and every mouthful brings something slightly different. This attraction may be because my mother was a 1950's housewife and casseroles where a big part of her cooking repertoire and I loved them. Well, other than her tuna fish casserole which still makes me gag just thinking about it.

I don't think I've actually ever made a paella. The recipes often involve seafood, and I don't eat seafood, so I've never tried making one. But this was a nice light spring dinner, packed with vegetables. This makes a lot, so it's perfect for a buffet or a spring party. If you are vegetarian, just leave out the summer sausage, and it will still be a delicious meal. This recipe was devised and shared by Rebecca Vandevelde.
