White Chocolate Pudding Parfaits
Yield: Makes 4 servings
Ingredients:
2
cups reduced-fat (2%) milk
1
package (4-serving size) sugar-free instant white chocolate pudding mix
3/4
cup cold whipping cream
1-1/2
cups fresh raspberries or sliced strawberries
2
tablespoons chopped roasted shelled pistachio nuts or chopped toasted macadamia nuts
Preparation:

Combine milk and pudding mix in medium bowl; beat 2 minutes. Refrigerate 5 minutes or until thickened. Beat whipping cream in clean bowl with electric mixer at high speed until stiff peaks form. Fold whipped cream into pudding.

In each of 4 parfait glasses, layer 1/4 cup pudding and 2 tablespoons raspberries; repeat layers. Spoon remaining pudding over berries. Serve immediately or cover and refrigerate up to 6 hours before serving. Sprinkle with nuts just before serving.
