Wood Chick’s BBQ Grilled Marinated Vegetables

INGREDIENTS

Marinade
3/4 cup extra virgin olive oil
1/3 Fresh lemon juice
2 Tablespoon of fresh thyme, finely chopped or 1 tbsp dry
5 Tablespoon fresh rosemary, finely chopped or 2 tbsp dry
1/2 Teaspoon sugar
1/2 Teaspoon salt
1/2 Teaspoon freshly ground pepper
Vegetables
1 Zucchini
1 Squash
1 Red onion, sliced into ½ “ thick slices
10 Asparagus spears, bottom snapped off
10 Mushrooms
1 Red bell pepper, cut into wedges, lengthwise

PREPARATION:

  1. Pour marinade over veggies and marinade for ½ hr.
  2. Preheat grill to med –high heat.
  3. Remove veggies from marinade and place on grill.
  4. Lightly oil grill grates just prior to putting veggies on.
  5. Grill for 15-20 min.
