Wood Chick’s BBQ Grilled Marinated Vegetables
Lee Ann Whippen of Wood Chick's BBQ shares her Grilled Marinated Vegetable recipe. Whippen appears in 'BBQ Pitmasters' on TLC.
INGREDIENTS
| Marinade | |
| 3/4 | cup extra virgin olive oil |
| 1/3 | Fresh lemon juice |
| 2 | Tablespoon of fresh thyme, finely chopped or 1 tbsp dry |
| 5 | Tablespoon fresh rosemary, finely chopped or 2 tbsp dry |
| 1/2 | Teaspoon sugar |
| 1/2 | Teaspoon salt |
| 1/2 | Teaspoon freshly ground pepper |
| Vegetables | |
| 1 | Zucchini |
| 1 | Squash |
| 1 | Red onion, sliced into ½ “ thick slices |
| 10 | Asparagus spears, bottom snapped off |
| 10 | Mushrooms |
| 1 | Red bell pepper, cut into wedges, lengthwise |
PREPARATION:
- Pour marinade over veggies and marinade for ½ hr.
- Preheat grill to med –high heat.
- Remove veggies from marinade and place on grill.
- Lightly oil grill grates just prior to putting veggies on.
- Grill for 15-20 min.
