YIELD Makes 3 cups

INGREDIENTS

1 tablespoon olive oil
5 green onions, sliced
1‑2/3 cups water
1/8 teaspoon saffron threads or 1/2 teaspoon ground turmeric
1/4 teaspoon salt
1 cup precooked couscous*
*Check ingredient label for "precooked semolina."

PREPARATION:

  1. Heat oil in medium saucepan over medium heat until hot. Add onions; cook and stir 4 minutes. Add water, saffron and salt. Bring to a boil. Stir in couscous. Remove from heat. Cover; let stand 5 minutes.
