Zesty Meatball Sandwich
Makes 4 servings
|1||jar (16 ounces) spicy thick and chunky salsa|
|1||can (8 ounces) tomato sauce|
|1||to 2 teaspoons chili powder or chipotle chili powder|
|1||pound 85% lean ground beef chuck|
|1/3||cup plain dried bread crumbs|
|1/4||cup minced onion|
|1/2||teaspoon black pepper|
|4||(6-inch) sourdough or French rolls, split|
- Combine salsa, tomato sauce and chili powder in medium bowl; set aside.
- Combine beef, egg, bread crumbs, onion, salt and pepper in large bowl; mix well. Form into 16 (about 1-1/2-inch) meatballs.
- Cook meatballs in large skillet over medium-high heat 6 to 8 minutes or until brown. Add salsa mixture; bring to a boil. Cover; reduce heat to low. Cook, stirring occasionally, 20 to 25 minutes. Place 4 meatballs in each roll; top with salsa mixture.
