Zesty Meatball Sandwich

Makes 4 servings

Ingredients

1 jar (16 ounces) spicy thick and chunky salsa
1 can (8 ounces) tomato sauce
1 to 2 teaspoons chili powder or chipotle chili powder
1 pound 85% lean ground beef chuck
1 egg
1/3 cup plain dried bread crumbs
1/4 cup minced onion
1/2 teaspoon salt
1/2 teaspoon black pepper
4 (6-inch) sourdough or French rolls, split

Preparation

  1. Combine salsa, tomato sauce and chili powder in medium bowl; set aside.
  2. Combine beef, egg, bread crumbs, onion, salt and pepper in large bowl; mix well. Form into 16 (about 1-1/2-inch) meatballs.
  3. Cook meatballs in large skillet over medium-high heat 6 to 8 minutes or until brown. Add salsa mixture; bring to a boil. Cover; reduce heat to low. Cook, stirring occasionally, 20 to 25 minutes. Place 4 meatballs in each roll; top with salsa mixture.
