Raw Tagliatelle Pasta of Zucchini and Carrots

My main goal with this recipe is to show off how easy it is to make raw pasta using veggies. I used a green and a yellow zucchini and threw in a carrot as well.

INGREDIENTS

PREPARATION:

Method

  1. All you need to do is to carefully cut slices out of each veggie using a vegetable peeler or a mandolin. Although I really think a peeler works best.
  2. Toss the ribbons with any sauce you want, such as a marinara, vinaigrette, simple olive oil, or something wacky like my Thai coconut peanut sauce.
