Apple Cranberry Crisp

Makes 6 to 8 servings
|1||cup brown sugar, divided|
|1||teaspoon ground cinnamon|
|1/2||teaspoon ground ginger|
|1/4||teaspoon ground nutmeg|
|5||to 6 cups cubed peeled tart apples|
|1||cup fresh or frozen cranberries or 1/2 cup dried cranberries|
|1||teaspoon freshly grated orange peel|
|1/2||cup buttermilk baking mix|
|1/2||cup uncooked oats|
|1/2||cup coarsley chopped walnuts|
|1/4||cup (1/2 stick) butter|
|Vanilla ice cream (optional)|
- Preheat oven to 350°F. Grease shallow 2-quart baking dish.
- Combine 1/2 cup brown sugar, cornstarch, cinnamon, ginger and nutmeg in large bowl. Add apples, cranberries and orange peel; toss to mix well. Spoon into prepared dish.
- Combine baking mix, oats, nuts, remaining 1/2 cup brown sugar and salt in medium bowl. Cut in butter with pastry blender or 2 knives until mixture resembles coarse crumbs. Sprinkle over apple mixture.
- Bake 50 minutes or until apples are tender. Serve warm with ice cream.
