Apple Curry Chicken


Makes 4 servings


4 boneless skinless chicken breasts
1 cup apple juice, divided
1/4 teaspoon salt
Dash black pepper
1-1/2 cups plain croutons
1 medium apple, chopped
1 medium onion, chopped
1/4 cup raisins
2 teaspoons brown sugar
1 teaspoon curry powder
3/4 teaspoon poultry seasoning
1/8 teaspoon garlic powder


  1. Preheat oven to 350°F. Lightly grease 2-quart baking dish.
  2. Arrange chicken breasts in single layer in prepared dish. Combine 1/4 cup apple juice, salt and pepper in small bowl. Brush juice mixture over chicken.
  3. Combine croutons, apple, onion, raisins, brown sugar, curry powder, poultry seasoning and garlic powder in large bowl. Toss with remaining 3/4 cup apple juice.
  4. Sprinkle crouton mixture over chicken. Cover with foil; bake 45 minutes or until chicken is tender and no longer pink in center.
