Apple Orchard Pancakes

Makes about 20 pancakes
Ingredients
2-1/2 | cups all-purpose flour |
3/4 | cup packed brown sugar |
2 | teaspoons baking powder |
1-1/4 | teaspoons ground cinnamon |
1/2 | teaspoon baking soda |
1/4 | teaspoon salt |
2 | eggs |
1-1/2 | cups milk |
1/4 | cup vegetable oil |
1 | teaspoon butter |
3/4 | cup chopped dried apples |
1/2 | cup golden raisins |
Preparation
- Combine flour, brown sugar, baking powder, cinnamon, baking soda and salt in large bowl.
- Beat eggs in medium bowl; stir in milk and oil. Add egg mixture to flour mixture; stir until almost blended. Stir in apples and raisins.
- Lightly coated griddle with butter. Heat griddle over medium heat until hot. Pour about 1/4 cup batter onto griddle for each pancake. Cook until bubbles form in batter and bottom of pancakes are lightly browned; turn and cook 2 minutes or until brown and cooked through. Repeat with remaining batter. Serve pancakes with syrup, if desired.
