Apple Pancake Sandwich

Ingredients
2 | small Granny Smith apples |
1/3 | cup liquid egg whites |
2 | tablespoons bacon bits |
1/4 | teaspoon ground cinnamon |
1/2 | teaspoon sugar substitute |
4 | frozen pancakes |
4 | teaspoons sugar-free maple syrup |
Preparation
- Peel, core and chop apples (yields about 1 cup). Mix apples, egg whites, bacon bits, cinnamon and sugar substitute in small bowl.
- Place 2 frozen pancakes in small microwave-safe dish and top each evenly with apple mixture. Microwave on HIGH 3 minutes.
- Drizzle each with 2 teaspoons of maple syrup, top with remaining pancakes and microwave on HIGH 2 more minutes.
- Serve warm or let cool to pick up like a sandwich.
Note
To reduce sodium and increase fiber, make your own pancakes from a multigrain pancake mix ahead of time and freeze them between layers of plastic wrap. You may also make this recipe with frozen multigrain waffles.
