Apple Streusel Muffins
Prep and Cook Time 30 minutes
Makes 18 mini muffins
|1/4||cup chopped pecans|
|2||tablespoons brown sugar|
|1||tablespoon all-purpose flour|
|2||teaspoons butter, melted|
|1||package (7 ounces) apple-cinnamon muffin mix|
|1/2||cup shredded peeled apple|
- Preheat oven to 425°F. Coat 18 mini-muffin cups with nonstick cooking spray.
- Combine pecans, brown sugar, flour and butter in small bowl.
- Prepare muffin mix according to package directions. Stir in apple. Fill each muffin cup 2/3 full. Sprinkle approximately 1 teaspoon pecan mixture on top of each muffin. Bake 12 to 15 minutes or until golden brown. Cool slightly. Serve warm.
For regular-size muffins, grease six 2-1/2-inch muffin cups. Prepare topping and batter as directed. Fill muffin cups 2/3 full. Sprinkle approximately 1 tablespoon pecan mixture on each muffin. Bake 18 to 20 minutes or until golden brown.
