Apricot Chicken Sandwiches
Makes 4 servings
|6||ounces poached chicken tenders|
|2||tablespoons no-sugar-added apricot fruit spread|
|2||tablespoons chopped fresh apricots (pits removed)|
|4||slices whole wheat bread|
- Drain cooked chicken; chop well. Mix with apricot spread and chopped fruit.
- Top bread with lettuce leaves. Divide chicken mixture evenly among bread slices; slice in half, folding over to make half-sandwich. Slice each half again to make 2 wedges. Serve immediately.
