Apricot Chicken Sandwiches


Makes 4 servings


6 ounces poached chicken tenders
2 tablespoons no-sugar-added apricot fruit spread
2 tablespoons chopped fresh apricots (pits removed)
4 slices whole wheat bread
4 lettuce leaves


  1. Drain cooked chicken; chop well. Mix with apricot spread and chopped fruit.
  2. Top bread with lettuce leaves. Divide chicken mixture evenly among bread slices; slice in half, folding over to make half-sandwich. Slice each half again to make 2 wedges. Serve immediately.
