Artichoke and fava bean crostini

Fava beans are an eastern Mediterranean member of the pea family, but you likely recognize them as an oversized long green bean. They do really well in tons of recipes and while they do often pop up on restaurant menus, lots of people are afraid to cook with them at home. Fava beans also have lots of protein as well as a healthy dose of iron and fiber. These guys also contain L-dopa, the amino acid that produces dopamine, one of our body?s main feel good responses. Before putting fava beans to use, remove them from the pods and boil them in salted water for three minutes and slip them out of their waxy coating. Try this Artichoke and fava bean crostini recipe.


1 fresh baguette
2 tbsp organic olive oil
3/4 cup fava beans
1/4 cup artichoke hearts
1 clove garlic


  1. Slice the baguette to uniform slices and drizzle with olive oil. Toast in the oven at 375 degrees.
  2. Pulse the fava beans, artichoke hearts, and garlic in the blender until it's a rustic and chunky consistency.
  3. Spread atop the toasted bread. Substitute artichokes for black olives for a different take.
