Banana Cream Parfaits

Makes 4 servings
|1||package (4-serving size) sugar-free cook-and-serve vanilla pudding and pie filling mix|
|2||cups low-fat (1%) milk|
|1||cup coarsely crushed sugar-free cookies|
|2||large ripe bananas, peeled and sliced|
|Mint sprigs (optional)|
- Prepare pudding according to package directions, using low-fat milk; cool 10 minutes, stirring occasionally.
- In each of 4 parfait or wine glasses, layer 2 tablespoons cookie crumbs, 1/4 cup banana slices and 1/4 cup pudding. Repeat layers. Cover; chill at least 1 hour or up to 6 hours before serving. Garnish with mint sprigs, if desired.
Sugar-free chocolate pudding and pie filling mix can be substituted for vanilla pudding.
