Beef Caesar Salad
Makes 4 servings
|1||bag (10 ounces) ready-to-use chopped romaine lettuce|
|2||tablespoons fat-free Caesar salad dressing|
|1||boneless beef top sirloin steak (about 1 pound)|
|Nonstick cooking spray|
|2||slices whole wheat bread, toasted and cut into 32 squares|
- Toss lettuce and dressing in large bowl. Divide salad greens evenly among 4 plates.
- Cut steak lengthwise in half, then crosswise into 1/8-inch-thick strips. Spray 12-inch nonstick skillet with cooking spray and heat over high heat. Add beef; stir-fry 2 minutes or until beef is tender.
- Top each plate of lettuce mixture with 1/4 of steak strips. Season with pepper and top with 8 croutons.
Serve with tomato soup or a meatless vegetable soup such as minestrone.
