Makes 4 (1/2-cup) servings
|1||cup heavy cream|
|2||tablespoons sugar substitute*|
|1||teaspoon grated lemon peel|
|3/4||cup blueberries, divided|
|3/4||cup sliced strawberries, divided|
|Lemon twist or fresh mint (optional)|
*This recipe was tested using a sucralose-based sugar substitute.
- Beat cream, sugar substitute, lemon peel and vanilla in large bowl at high speed of electric mixer until thick.
- Place 1 tablespoon blueberries and 1 tablespoon strawberries in each of 4 parfait or dessert dishes. Spoon 1/4 cup cream mixture on top of berries. Repeat layers. Garnish with lemon twist or fresh mint leaves, if desired. Refrigerate until ready to serve.
Frozen, unsweetened strawberries and/or blueberries can be substituted for the fresh berries. Thaw them before using in the recipe.
