|1||egg white,* at room temperature|
|2||to 2-1/2 cups sifted powdered sugar|
|1/2||teaspoon almond extract|
|Blue liquid or paste food coloring|
*Use only grade A clean, uncracked egg.
- Beat egg white in small bowl at high speed of electric mixer until foamy.
- Gradually add 2 cups powdered sugar and almond extract. Beat at low speed until moistened. Increase mixer speed to high and beat until icing is stiff, adding additional powdered sugar if needed. Tint icing blue with food coloring, a little at a time, until desired shade is achieved.
