Broiled Orange Roughy with Green Peppercorn Sauce


Makes 4 servings


1 cup loosely packed cilantro leaves
2 tablespoons dry white wine
2 tablespoons Dijon mustard
1/2 teaspoon green peppercorns, rinsed, drained
4 orange roughy fillets (about 6 ounces each)


  1. Preheat broiler. Position oven rack about 4 inches from heat source.
  2. Combine all ingredients except fish in food processor or blender; process until well blended. Set aside.
  3. Place fish in shallow baking pan; top with sauce.
  4. Broil 10 minutes or until fish flakes easily when tested with fork.
