Broiled Shrimp Kabobs

Ingredients
2 | tablespoons olive oil |
2 | tablespoons lemon juice |
1/2 | teaspoon bottled minced garlic |
1/2 | teaspoon salt |
1/2 | teaspoon dried oregano leaves |
1/8 | teaspoon ground red pepper |
1/2 | pound medium shrimp, peeled |
1 | red bell pepper, cut into squares |
1 | medium zucchini, cut into 1/2-inch slices |
Preparation
- Preheat broiler. Whisk together oil, lemon juice, garlic, salt, oregano and ground red pepper in medium bowl. Add shrimp, bell pepper and zucchini; stir until well coated.
- Alternately thread shrimp, bell pepper and zucchini onto skewers. Place on rack of broiler pan. Broil 4 inches from heat 2 minutes per side or until shrimp turn pink and opaque.
