Rhoda Brown & Smokin' Fatties' Crown Roast Pork

Kosher salt
White vinegar
Cayenne pepper
Brown sugar
Chili powder
Mixture of 3 commerical sauces


  1. Scrape the bones clean. Trim excess fat.
  2. Saturate meat with injection.
  3. Apply rub lightly.
  4. Cook slow and low in smoker.
  5. Baste hourly for 3 hours.
  6. Wrap meat in foil, return to smoker for another 5-6 hours.
  7. Pull pork, mix with additional hogwash sauce and au jus.
