|1||cup cooked soba noodles, drained and chopped well|
|1/3||cup chopped cooked bacon|
|1/3||cup minced parsley|
|1/4||cup minced red bell pepper|
|1||teaspoon minced garlic|
|1||egg white, beaten until foamy|
|1/2||teaspoon black pepper|
|Nonstick cooking spray|
- Mix noodles with bacon, parsley, bell pepper, garlic and egg white. Stir well. Add ground black pepper and stir again. Egg white should be partially absorbed.
- Spray a large skillet with nonstick cooking spray and place over medium-high heat. When pan is hot, use 1/4 cup measure to scoop noodle mixture onto hot skillet. Cook until noodles are browned on edges, about 3 to 4 minutes. Spray each noodle cluster with nonstick spray and flip to cook on other side. Cook about 3 to 4 minutes. Serve warm.
