Cajun Grilled Shrimp with Rotini and Roasted Red Pepper Sauce
Not only is shrimp low in calories, but it is also an excellent source of protein, zinc, iron and copper.
Makes 4 servings
|10||ounces uncooked rotini pasta|
|2||jars (7 ounces each) roasted peppers packed in water, well drained|
|2||tablespoons olive oil|
|1/4||cup chicken broth|
|1/8||teaspoon ground red pepper|
|Nonstick cooking spray|
|12||ounces medium shrimp, peeled and deveined|
|1-1/2||teaspoons chili powder|
|1-1/2||teaspoons lemon pepper|
- Cook pasta according to package directions, omitting salt. Drain; set aside.
- Meanwhile, place peppers, garlic, oil, salt, chicken broth and ground red pepper in food processor or blender; process until smooth. Set aside.
- Spray large nonstick skillet with cooking spray. Heat over medium heat until hot. Add shrimp, chili powder, lemon pepper and paprika; cook and stir 8 minutes or until shrimp are opaque. Add roasted pepper mixture; heat thoroughly. Do not boil. Serve over pasta. Garnish with chopped parsley, if desired.
