Moe Cason & Ponderosa BBQ's Cornbread

1 cup yellow cornmeal
1/4 cup flour
1/4 cup sugar
1 Teaspoon baking powder
1 Teaspoon baking soda
1/2 Teaspoon salt (optional)
3/4 cup milk
1/4 cup vegetable oil
2 eggs, beaten
1 4 ounce can green chile
1 cup cheddar cheese, shredded


  1. Mix wet and dry ingredients in two separate bowls.
  2. Stir dry ingredients into liquid mix until moistened. Don't over mix!
  3. Pour batter in skillet and bake for 30-35 minutes at 375 degrees.
