- Trim underneath ribs, remove membrane. Trim around jowls. Pull skin away from ham.
- Inject into shoulders, ham, loins and bacon.
- Sprinkle sea salt all over hog. Then apply hog heavily with rub.
- Cook on pit at 250-270 degrees for 7-8 hours.
