Cayenne Cinnamon Baby Back Ribs with Maple Glaze Recipe

Makes 4 servings
|1/3||cup firmly packed brown sugar|
|1||tablespoon garlic powder|
|1/2||teaspoon ground cinnamon|
|1/2||teaspoon cayenne pepper (or crushed red pepper flakes)|
|1||teaspoon sea salt (or 1/2 teaspoon table salt)|
|3||pounds pork baby back ribs, like St. Louis rib cut|
|1/4||cup maple syrup|
|1||cup cucumbers, julienne sliced|
- Preheat oven to 375F, or prepare the grill. Remove the tough membrane from the underside of the ribs.
- In a small bowl, combine the brown sugar, garlic powder, paprika, ground cinnamon, cayenne pepper and salt and mix thoroughly. On a sheet of tinfoil large enough to enclose the ribs, place the ribs and season both sides generously with the rub. Close the foil, completely sealing the ribs inside. Place ribs on baking sheet or in a roasting pan.
- Bake 1 hour or until meat starts to pull away from bones. Remove the ribs from the oven.
- Move the rack to the upper-mid position and turn the broiler on high. Carefully open the foil and brush the ribs with maple syrup, leaving it open. Broil ribs 3-4 minutes until browned. Keep an eye on the ribs to make sure they don't burn!
