Cheesy Broccoli Casserole

Makes 4 to 6 servings


2 packages (10 ounces each) chopped broccoli
1 can (10-3/4 ounces) condensed cream of potato soup
1-1/4 cups (5 ounces) shredded sharp Cheddar cheese, divided
1/4 cup minced onion
1 teaspoon hot pepper sauce
1 cup crushed potato chips and saltine crackers


  1. Lightly grease slow cooker. Combine broccoli, soup, 1 cup cheese, onion and pepper sauce in slow cooker; mix well.
  2. Cover; cook on LOW 5 to 6 hours or on HIGH 2-1/2 to 3 hours.
  3. Sprinkle chips and remaining 1/4 cup cheese over broccoli mixture. Cook, uncovered, on LOW 30 to 60 minutes or until cheese melts.


For a crispy topping, transfer casserole to a baking dish. Sprinkle with remaining cheese and crackers. Bake 10 to 15 minutes in preheated 400°F oven.
