Cherry-Chocolate Logs


Makes about 3/4 pound


1 cup (6 ounces) semisweet chocolate chips
1/4 cup sweetened condensed milk
1/4 teaspoon almond extract
1/2 cup quartered maraschino cherries, drained
1 cup coarsely chopped pecans


  1. Melt chips in heavy, small saucepan over very low heat, stirring constantly. Stir in condensed milk and almond extract. Remove from heat.
  2. Stir in cherries. Refrigerate until mixture can be shaped into logs, about 15 minutes.
  3. Shape into 2 (1-1/2-inch) logs. Roll logs in pecans. Refrigerate until firm.
  4. Cut into 1/2-inch slices. Store in refrigerator.
