Chicken Caesar Salad

Makes 2 servings
|6||ounces chicken tenders|
|1/4||cup plus 1 tablespoon Caesar salad dressing, divided|
|4||cups (about 5 ounces) prepared Italian salad mix (romaine and radicchio)|
|1/2||cup croutons, divided|
|2||tablespoons grated Parmesan cheese|
- Cut chicken tenders in half lengthwise and crosswise. Heat 1 tablespoon salad dressing in large nonstick skillet. Add chicken; cook and stir over medium heat 3 to 4 minutes or until chicken is cooked through. Remove chicken from skillet; season with pepper; let cool.
- Combine salad mix, 1/4 cup croutons, remaining 1/4 cup salad dressing and Parmesan cheese in serving bowl; toss to coat. Top with chicken and remaining 1/4 cup croutons.
