Chicken Patty with Lemon-Mustard Sauce
These chicken patties are also good as an entrée with vegetable accompaniments.

|Lemon-Mustard Sauce (page 59)|
|1||pound boneless skinless chicken breasts, ground|
|1/4||cup finely chopped onion|
|1/4||cup finely chopped red or green bell pepper|
|1||clove garlic, minced|
|2||tablespoons dry bread crumbs|
|1/4||teaspoon black pepper|
|Nonstick cooking spray|
|4||rounds pita bread or whole-grain bread, toasted|
- Prepare Lemon-Mustard Sauce.
- Combine chicken, onion, bell pepper, garlic, bread crumbs, salt and pepper in medium bowl; shape into 4 patties about 4 inches in diameter and 1/2 inch thick.
- Spray large nonstick skillet with cooking spray; heat over medium heat. Add patties; cook 4 minutes. Turn patties; cook 4 more minutes or until no longer pink in center and internal thermometer inserted into center of chicken reads 165°F.
- Place lettuce in pita; top with chicken and sauce.
