Chicken & Wild Rice Skillet Dinner the Editors of Publications International, Ltd.

|1||teaspoon reduced-fat margarine|
|2||ounces boneless skinless chicken breast, cut into strips (about 1/2 chicken breast)|
|1||package (5 ounces) long-grain and wild rice mix with seasoning|
|3||dried apricots, cut up|
- Melt margarine in small skillet over medium-high heat. Add chicken; cook and stir 3 to 5 minutes or until cooked through.
- Meanwhile, measure 1/4 cup of the rice and 1 tablespoon plus 1/2 teaspoon of the seasoning mix. Reserve remaining rice and seasoning mix for another use.
- Add rice, seasoning mix, water and apricots to skillet; mix well. Bring to a boil. Cover and reduce heat to low; simmer 25 minutes or until liquid is absorbed and rice is tender.
