Cilantro-Cornmeal Dumplings

1/4 cup all-purpose flour
1/4 cup yellow cornmeal
1/2 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon shortening
1 tablespoon shredded Cheddar cheese
2 teaspoons minced fresh cilantro
1/4 cup milk


  1. Mix flour, cornmeal, baking powder and salt in medium bowl. Cut in shortening with pastry blender or two knives until mixture resembles coarse crumbs. Stir in cheese and cilantro. Pour milk into flour mixture. Combine just until dry ingredients are moistened.
